Tarator is a favorite sauce in the Eastern Mediterranean. Serve it with shawarma, fish, falafel, kefta or over vegetables. Sometimes spelled taratoor, taratur or taratour.

Makes about 1 cup

Ingredients

  • Tahini -- 1/4 cup
  • Water -- 1/2 cup
  • Lemon juice -- 1/4 cup
  • Salt -- 1 teaspoon

Method

  1. Add all the ingredients to a large bowl and whisk together until smooth. Add more or less water depending on how thick you like the sauce. It is typically served somewhat thick in the Middle East, drizzled with olive oil.

Tarator Variations

  • Add one or two cloves of minced garlic if you like.
